This book literally changed my life. Highly recommend!
I've read a lot of cookbooks and this is one of the best cookbooks I've ever read.
Covers the basics on how to build a dish (there's a whole chapter on salt!) then a lot of the basics that will allow you to build different kinds of recipes.
Reminds me of the Jacques Pepin quote:
"That's exactly the way a recipe should work. After you've done it once, you know what it smells like, you know what it tastes like. The second time you do it, you take a faster look at the recipe — 'yeah, yeah.' By the third time, you start improving it. ... And a year later, you've done it 15 times. It has become your recipe. And I think that's the way it should work and that's the way I hope people will do my recipe."

This may be the best cooking book I've ever read...and I've read a lot of them. Nosrat explains the purpose of each of these 4 elements of cooking clearly and with real world examples. It's the best of all teaching - narrative examples and good scientific backing. Then there are actual recipes. I highly recommend this for anyone who wants to be a good cook!
